Sausage, Potato and Moringa Soup

SchneiderPeeps - Sausage, Potato and Moringa soup is an incredibly healthy soup.  Moringa is similar to spinach in taste and texture but jam packed with nutrients.  It's the only plant that is actually a complete protein.

One of the important things for me as a parent, is to raise children who have some life skills under their belt. Now, whether they chose to use those skills as adults is their decision but at least I know my kids can cook when they leave our home {One of our new favorites is Sausage, Potato and Moringa Soup. The recipe is at the bottom of the post.} I also want them to be lifelong learners. I think it’s really important that learning doesn’t stop once formal education stops.

As we look toward 2015 we’ve encouraged our children (and ourselves) to try something new or go deeper with a skill they’ve been working on. For me, I think it’s time I went a little deeper with my herbal knowledge and to slow down. I feel like the last year and a half have been a whirlwind of activity and giving of myself and I need force myself to slow down and feed my soul. That might just mean taking a 20 minute break during the day and being still, it might mean saying “no” to additional opportunities, it definitely means doing some projects that are just for me. Projects that will bless my family but will also feed my soul.

That’s what I think I’ve been missing, giving myself permission to do something just because I want to – not because I have to. I think sometimes as a mom, I have a hard time realizing that it is okay to not spend all my time helping someone else. It’s okay to say, “Even if no one else cares or notices, new pillow covers make me smile so I’m going to spend time to make them…for me.”

So, we have this new favorite recipe; sausage, potato and moringa soup.

Actually, it’s not completely new to us but I used moringa instead of kale in it because our kale wasn’t ready and I thought it would be a good way to try the moringa we’ve been growing.

I know some people feel like you should always follow a recipe, I don’t. I think it’s okay to have our food taste a little different each time we make it. To me, that’s part of “it’s  okay to do something just because you want to.” Most of our meals follow more a process than a recipe, and this one is no different.

Sausage, Potato and Moringa Soup

This homemade sausage, potato, and moringa soup can be made in under 30 minutes. Kale or spinach can be substituted for the moringa, if you don't grow moringa.

Ingredients

  • 1 pound venison or chicken sausage (we've used pan sausage and link sausage with equal success)
  • 2 pounds of chopped potatoes
  • 8-12 cups vegetable or chicken broth/stock
  • 2 bay leaves
  • 1 large onion, chopped
  • 6 cloves garlic, chopped fine
  • a lot of moringa leaves (or kale chopped small)
  • Salt and pepper to taste
  • Dash of cayenne (optional - I put this in my soups when we're struggling with stuffy noses)

Instructions

In large stockpot, cook sausage.

When sausage is just about done, add onions and garlic and cook for just a minute or two.

Add broth, potatoes, bay leaves, moringa (or kale) and spices.

Cook over medium heat until potatoes are done.

Serve with warm bread.

Notes

This recipe is super versatile. I've used white beans instead of potatoes and I've added carrots at times, it turns out just fine.

You can add cream or half and half to make it a creamy soup, if you like.

This sounds so awesome Angi, My Kale is ready, but I will have to try the Moringa. I had never heard of it before so you know me, I am always excited to try something new in the garden. Thanks for sharing.
