Leftover Oatmeal Muffins

I don't know about in your family but in mine I can never get the servings right when I make oatmeal by the pan. Six people should eat six servings, right? Especially when I add chopped apples, maple syrup and cinnamon. And yet, time after time I find myself with oatmeal left over. Fortunately, I have a solution for leftover oatmeal, leftover-oatmeal muffins.

Especially when I add chopped apples, maple syrup and cinnamon. And yet, time after time I find myself with oatmeal left over. Fortunately, I have a solution for leftover oatmeal, leftover-oatmeal muffins.

Y’all these muffins are so good that I sometimes intentionally make too much oatmeal, just so we can have them. And no one complains.

I’ll give a more exact recipe below but for the most part for every cup of leftover oatmeal, you use 1 egg, 1 tbsp butter, 1/2 cup milk, 1/4 cup sweetener (sugar, honey, maple syrup), 2 tbsp baking powder, 1-1.5 cups flour, and some add ins.

The flour amount varies by how watery your leftover oatmeal was to begin with, also by how thick you like your muffin batter. For this recipe, I like the final batter to be a little on the thick side so I add the flour last and keep mixing until I like the consistency. This is such a forgiving recipe so feel free to play around with it.

For add ins you could add chopped apples, bananas, raisins, dehydrated cranberries, berries, chocolate chips, anything you desire in a muffin would be good. These muffins have a very mild flavor and most of the time we don’t add anything to the mix and instead top with homemade jam or jelly.

Ingredients

  • 1 cup leftover oatmeal
  • 1 egg
  • 1 tbsp butter
  • 1/2 cup milk
  • 1/4 cup sweetener (sugar, honey, maple syrup)
  • 2 tbsp baking powder
  • 1-1.5 cups flour
  • Add-ins of your choice - berries, dried fruit, nuts, mini chocolate chips, etc.

Instructions

In a large mixing bowl, mix the ingredients in the order given.

Oil a muffin tin or line it with muffin liners. Scoop the muffin batter into the muffin tins.

Bake at 350F for 15-20 minutes.

Many times we look at leftovers and think we either need to eat them as leftovers or they can go to the chickens. But many leftovers can be used to make something completely new!

Can you use almond flour for this recipe?

I've never used almond flour for this but if you're comfortable using almond flour it's certainly worth a try. If you try it, I'd love to know how it works out for you.

Thank you for this recipe! I made these with oats a few months ago and they were so delicious. Today, I had leftover buckwheat groats, so I tried subbing those for the oatmeal and it was also a win!
