Making Pita

We’re not huge sandwich eaters around here but sometimes sandwiches are just so convenient, like when we’re traveling. So I’ve been trying to perfect the art of pita making…it is an art you know.

And I *think* I’ve come up with a recipe and have discovered the “secret” to making pita puff up.

 I’m going to tell you the secret first….a super duper hot oven. No baking at 325 degrees like you do for loaf bread or even 400 like you do for biscuits. Nope, you need your oven to be a hot 500 degrees.

The recipe is just as simple

Ingredients

6 cups whole wheat flour (I use freshly ground hard white wheat)
1 Tbsp yeast
1 1/2 tsp salt ( I like real salt but you can use sea salt or whatever you like)
4 Tbsp honey
2 Tbsp olive oil
2 cups warm water

How to Make Pita

I like to use my stand mixer but you can also do this by hand. Put flour, yeast and salt in bowl and stir. Add in honey, oil and water. Mix well. Knead for about 4-5 minutes.

If you did this by hand put the dough back into the bowl and cover. Let rise for about an hour. It will rise some but probably won’t double, that’s ok.

After the hour is up, take dough out of bowl , put it on a clean surface like a cutting  board and knead if for another minute  (I do this by hand).

Cut dough in half and then cut each half into 8 pieces.

Heat oven to 500 degrees. Roll each piece into a circle about 6″ in diameter (don’t worry to much about getting them looking “just right”). Put the rolled out circles on a lightly oiled baking sheet or well seasoned baking stone. Let them rise while the oven finishes heating to 500 degrees.

Bake for 5-8 minutes, just until puffed and lightly browned. Don’t worry if they don’t all puff up the same. My oven doesn’t heat evenly so I always have 2 that don’t puff. I just open it up with a knife.

Let cool and then cut with a bread knife. Stuff with your favorite ingredients.

Homemade Pita

secret to pita puffing

Additional Time 1 hour
Total Time 1 hour 23 minutes
