In the Kitchen ~ the spring break edition

Our kitchen has been busy, busy, busy these last couple of weeks. Not that it’s not busy all the time but it’s extra busy right now.

It started with Christian and Lizzy (my oldest son and his bride) coming home for their spring break last week. We had so much fun visiting with them and of course, making some of Christian’s favorite meals. That’s what good mama’s do, right?

We made fun stuff like  Pancit Bihon, homemade pizza – twice, I think my children could eat homemade pizza every night and not get tired of it – and waffles, just to name a few.

Phoebe is leaving for a 5 day dance event an they are staying in hotel. She’s super excited. Me? Not so much. To console myself, that she’ll do just fine without me, we’re making snacks for her and the dance company. Her main request was Banana jerky. Esther decided she wanted to do that project – I’m sure using a knife had something to do with it. We also made chewy granola bars and peanut butter treats. On the list for today are muffins – banana, zucchini and pumpkin.

I’m not sure making stacks for about 35 people is any cheaper than just having Phoebe buy snacks at the hotel. But it makes me happier.

I'm so glad. I hate when I waste other people's time. The salad was good once it was stir fried and put over some rice noodles.
