Crock pot Tamale Pie

A few weeks ago we went to visit my new nephew and his brothers – oh, and his parents. He’s beautiful by the way, just like his brothers. My oldest nephew is 5 so he and Esther had their first “sleep over”. It was so fun going into the room later that night and seeing them both on the floor facing each other. I’m sure they fell asleep talking. They’re both talkers.

One day for lunch, my sister in law made a great cornbread and meat casserole. All of my family liked it – which was really great. I made a few adjustments, the biggest one being I made it in the crock pot. {Recipe at the bottom of post}

One of the days we were there our second nephew’s physical therapist came. It was really amazing watching all that she does. My nephew is 3 and a year ago he couldn’t even sit up by himself, and here he is now walking with assistance. It’s inspiring! (You can learn more about Hunter and his one of a kind disability here.)

We had to take some time out of our unstructured free play (you can interpret that to mean it was getting a little wild and crazy) and sit down and make a craft. We made butterflies with coffee filters, makers, water and twisty ties.

It was a really great visit. And now, on to the recipe….

Crock pot Tamale Pie

1 pound ground beef (turkey or chicken ) – browned
2 cans pinto or red beans (I just used some beans I made the day before to freeze)
1 can of corn (optional)
Corn bread (any recipe will do here’s what I use):
1 cup corn meal (I grind popcorn for this)
1 cup flour (I use soft white wheat)
1tbsp sugar
3/4 tbsp baking powder
1/2 tsp salt
1 cup milk
2 eggs
1/4 cup oil

Brown the meat and then put it in the crock pot. Add beans and corn and stir. Oil the sides of the crockpot, I just used a little spray oil. Mix all the cornbread ingredients in a separate bowl. When mixed well put on top of meat and bean mixture. Cook on high for 4 hours.

You can also make this in a 9X13 pan and cook in the oven at 350 degrees for about 30 minutes. Until the cornbread is nicely browned and an inserted toothpick comes out clean.

This tamale pie recipe can be made in the crockpot or in the oven. It makes a tasty and hearty one-pot dinner.

Prep Time 30 minutes
Cook Time 4 hours
Total Time 4 hours 30 minutes

Ingredients

Angi, when you say you grind popcorn, do you mean un-popped regular popcorn kernels? I am curious and would love to try this one myself!Hilary

Yep, that's what I mean. You need to check your grainmill's owner's manuel to make sure it can handle popcorn. I have the K-tec Kitchen Mill and it can do popcorn. I don't know about the other mills. Let me know how it works for you.
